Winter Special Mirchi Achar Recipe: It is important to keep immunity strong in winter and chilli pickle without oil can prove helpful in this. This pickle prepared from green chillies, spices and natural ingredients is spicy in taste and beneficial for health. Due to the absence of oil in it, it is light, easy to digest and remains safe for a long time. This winter special recipe, which can be made quickly at home, doubles the taste of the food.
Jalore: Different types of pickles are added to homes in every season. Mango and lemon pickles are preferred in summers, while pickles like chilli, carrot and cabbage are made in winters. Pickles not only taste changes depending on the season, but are also considered beneficial for health. Similarly, a special and healthy pickle is made in winter. Fresh green chillies available in winter are best suited for this pickle. Housewife Santosh Devi tells that this pickle is prepared without oil, due to which it is light and not heavy on the stomach. To make it, green chilli, yellow mustard, fenugreek seeds, fennel, turmeric and salt are used.
Chillies are thoroughly washed and dried
Santosh Devi, the housewife who makes this pickle, told Local 18 that first of all the chillies are washed thoroughly and dried. After this, the chilli is cut from the middle and the seeds inside it are removed. Separately, yellow mustard, fenugreek and fennel are ground coarsely in the mixer. In this spice, turmeric and salt are added to the chopped chilli pieces and mixed well with hands.
The prepared mixture is filled in a clean and dry vessel and kept in sunlight or at normal room temperature for three days. During this, the chillies and spices release their water, due to which the pickle slowly melts. There is no need to worry about this, because this process makes the pickle delicious. After three days the pickle is ready to eat.
Turmeric has anti-bacterial properties
Talking about health, this pickle helps in increasing immunity in winter. Vitamin C present in chilli strengthens the body’s immunity. Turmeric has anti-bacterial properties, while fennel and fenugreek improve digestion. Due to the absence of oil, this pickle remains light on both weight and stomach.
